Lotus Root Chips (Yeongeon Chips)

Hi everyone, Happy 2015! ^^

My first post in 2015, it's a snack - Lotus root chips.
Do you know that lotus root has gender?? It's said that the round and short lotus root is a "female" whereas long and big one is a "male"! And, the female lotus root taste far better in cooking....I am not sure how true it is but I do found that round and short lotus root does taste better in making lotus root chips after a few times of experiments :p

How do you normally cook your lotus root? I remember my mom always cook it in soup or stir-fry with other veggies but not deep fried.  I only came to know that you can make chips from lotus root after I saw it on a Korean TV programme!! (Please excuse my ignorant... =.=" 真是井底之蛙... ) and from there I start to learn how to make it.  It's really easy and delicious!  The crisp and crunch of the chips make you can't resist it!  The whole container of lotus root chips will gone within minutes~~
After some research, I also came to know that many Chinese household in Malaysia made lotus root chips as one of the Chinese New Year snacks :)

Ingredients:
1 Lotus root (about 330g)
1 tsp Salt
Water for soaking
Oil for deep frying

Step by step photos:

  1. Wash and peel lotus root.  Cut or use a slicer to slice the lotus root into roughly 0.2cm.
  2. Prepare a bowl and put in salt and water.  Stir until the salt dissolve.
  3. Add in sliced lotus roots and soak for 5 - 10 minutes.
  4. Rinse the sliced lotus roots and drain.
  5. Pat dry with a kitchen paper towel.
  6. Heat oil on high heat (about 180 degree celcius).
  7. Test the oil by dropping a piece of lotus root.  If it float right away, the oil is hot enough for frying.
  8. Put in the sliced lotus roots and fry until golden brown and crispy.
  9. Remove from the frying oil and put them on kitchen paper towel to drip off excess oil.
  10. Sprinkle some salt if you like it a bit saltier or it's good to eat it on it's own~ Enjoy!
*Make sure to pat dry sliced lotus root to prevent oil splashing while frying.
**Make sure the oil is hot enough to fry.
